Rahier's Journey

Francois Rahier

  • Early Life

    Francois Rahier grows up in Belgium where he develops a passion for food and beautiful desserts while working alongside his mother in her kitchen.

  • Post-University

    Francois decides to pursue his passion for pastry, returning to school to study the craft.

  • Apprenticeship Period

    He secures a two-year apprenticeship at Debailleul, considered one of Brussels' top pastry shops.

  • Professional Journey

    Francois works as a pastry chef in various establishments in Brussels and then in the US, including an 18-month period under pastry chef Gilles Renusson.

Rahier Patisserie

  • Late 1990s

    After working and traveling in North America, Francois settles in Toronto and eventually opens Rahier Patisserie.

  • Joining of To

    Francois invites Souvannaraj Keopraseuth, known as To(to us!), whom he met during his apprenticeship at Debailleul, to join Rahier Patisserie. To, originally from Laos, also trained in Belgium and brings extensive experience in handcrafted chocolate, pastry, cakes, bread, and ice cream.

  • Ongoing Growth

    Rahier Patisserie witnesses a rising appreciation for fine European pastries in Toronto. Under the guidance of Francois and To, many former employees and trainees of Rahier go on to open their own pastry shops, contributing to the expansion of Toronto’s quality food movement.

  • Present

    Rahier remains a beloved neighborhood bakery in Leaside, celebrated for its commitment to quality, tradition, and the artisanal mastery of European culinary arts.
